Pittsburgh Revisited

Ingredients (use vegan versions):

    1/2 medium cabbage, cored and shredded
    8 oz (400 g) button mushrooms, sliced
    1 small onion, chopped
    garlic powder to taste
    12 oz noodles, cooked and drained
    1/3 cup soy buttery spread of your choice
    soy sauce and pepper flakes

DIRECTIONS:

In deep pot, melt soy buttery spread and sauté onion. Add mushrooms and toss until softened; toss shredded cabbage, cover and allow to wilt on medium heat.

Season with garlic powder and salt to taste.

Combine this mixture with noodles; pass pepper flakes and soy sauce at the table.

Serves: 6

Preparation time: 20 minutes
